Целью выпускной квалификационной работы явилась сравни-тельная товароведная характеристика и экспертиза безалкогольных напитков – достаточно дешевой и доступной для разных слоев населе-ния категорией вкусовых товаров. Образцами исследования были яб-лочные соки различных производителей, реализуемые в розничной торговой сети г. Санкт–Петербурга. В работе рассмотрены факторы, формирующие и сохраняющие качество соковой продукции; определена номенклатура показателей качества. Дана характеристика методов, с помощью которых были произведены исследования; произведена сравнительная экспертиза качества яблочных соков различных производителей, представленных в розничной торговой сети, проведена оценка соответствие качества требованиям нормативно–технической документации.

The purpose of the final qualifying work was a comparative commodity characteristic and examination of soft drinks – reasonably cheap and affordable for different segments of the population category of taste products. Samples of the study were soft drinks of various manufacturers, sold in the retail trade network of St. Petersburg. The paper considers the factors that form and preserve the quality of soft drinks; the nomenclature of quality indicators is defined. The characteristics of the methods by which the studies were carried out are given; a comparative examination of the quality of soft drinks of various manufacturers presented in the retail trade network was carried out, an assessment was made of the conformity of quality to the requirements of normative and technical documentation.
