Annotation

The ratio of components for the production of alginate emulsions are established, which can be used in the design of compositions for encapsulating various types of reducing agents. The high resistance of alginate emulsions to segregation corresponds to a structured system, the onset of the destruction of which is determined by the ratio O/A. The structure of stable alginate emulsions is characterized by an average particle size of the dispersed phase from 5 to 7 um, the average distance between which is from 7 to 9 um. The change in the particle size distribution of the dispersed phase occurs during the process of water evaporation from the alginate emulsion, which is explained by a decrease in the volume of the dispersion medium, the approach of the particles, their collision, compression, and pooling. An increase in particle diameter occurs on average by 28 % over 5 days, which is accompanied by an increase in viscosity by 4 times.
