Приведены цель, задачи и результаты экспертизы качества кефира разных производителей, по органолептическим, физико-химическим показателям и безопасности. Рассмотрена экономико-организационная структура предприятия розничной торговли «Верный» и оценена эффективность реализации кисломолочной продукции на предприятии.
