Проведено исследование и обоснование целесообразности разработки диетических мучных кондитерских изделий. Проведен анализ сырья для производства кондитерских изделий, усовершенствована технология кексов, путем добавления мучной безглютеновой смеси на основе черемухи. Произведен технологический расчет кондитерского цеха, а также подобрано оборудование с необходимыми параметрами. Разработана оптимальная организационная структура и система безопасности деятельности предприятия. Доказана актуальность организации производства кексов с черемухой.
A study and justification of the development of dietary flour confectionery products. The analysis of raw materials for the production of confectionery products has been carried out, the technology of cupcakes has been improved by adding a flour gluten-free mixture based on bird cherry. The technological calculation of the confectionery shop was made, as well as equipment with the necessary parameters was selected. The optimal organizational structure and security system of the enterprise has been developed. Proved the relevance of the production of cupcakes with bird cherry.
