Работа посвящена сравнительной экспертизе качества хлеба из ржаной муки традиционного ассортимента и инновационной продукции, реализуемой на потребительском рынке г. Санкт-Петербурга. Экспертизу проводили по органолептическим, физико-химическим показателям и показателям свежести в процессе хранения. На примере розничного торгового предприятия «Лента» проведена оценка эффективности реализации хлебобулочной продукции, и доказана перспективность увеличения товарооборота за счет реализации хлеба нового ассортимента.
