В выпускной квалификационной работе рассмотрены вопросы классификации и ассортимента мучных кондитерских изделий, описана технология их производства. Также рассмотрена пищевая ценность кексов, их химический состав, показатели качества и методы их контроля. Приведены цель, задачи и результаты оценки качества исследуемых образцов «столичных» кексов по органолептическим и физико-химическим показателям. Рассмотрена экономико-организационная структура розничного торгового предприятия ООО «Карусель» и дана оценка эффективности реализации «столичных» кексов на предприятии.
In the final qualifying work are considered the questions of classification and of the range flour confectionery products and is described the technology of production. Also is considered the nutritive value and chemical composition of muffins; quality indices and methods of its control. In the work is given the purpose, objectives and the results of quality assessment of samples of the “stolichn'” cupcakes on organoleptic and physico-chemical indicators. Is reviewed economic and organizational structure of the retail trade enterprise "Karusel'" and evaluated the effectiveness of the implementation of the " stolichn'" of cupcakes in the enterprise.
