Целью работы является разработка методики оценки целевой величины резервов на примере компании пищевой промышленности. Задачи работы: теоретический обзор управления резервами в цепи поставок, описание методов управления запасами в компании пищевой промышленности, разработка методики оценки целевой величины резервов в цепи поставок на примере ООО «Пивоваренная компания «Балтика». Работа выполнялась на материалах ООО «Пивоваренная компания «Балтика». Применялись общенаучные методы исследования: контентный и сравнительный анализ, метод аналогий, а также специфические методы исследования, в частности, прогнозирование, расчет страховых запасов, сбор и обработка данных, методы оценки эффективности проекта. Основные результаты работы: произведен анализ хозяйственно-экономической деятельности организации, разработана методика расчета страховых запасов с учетом ограничений по площадям и сроку хранения, обоснована коммерческая эффективность применения предложенной методики. Практическая значимость работы определяется возможностью реализации разработанной методики в ООО «Пивоваренная компания «Балтика».

The aim of the graduate qualification work is to develop a methodology for the reserves target value estimation in a supply chain based on example of Baltika Breweries LLC company. Tasks of the graduate qualification work: theoretic overview of reserves management in the supply chain, description of supply chain management policies and methods in the food processing industry, development of a methodology for the reserves target value estimation in a supply chain based on example of Baltika Breweries LLC company. The graduate qualification work was carried out on the basis of the Baltika Breweries LLC. General scientific research methods were used: content and comparative analysis, the method of analogies, as well as specific research methods, in particular, forecasting, safety reserves calculation, data collection and processing, project effectiveness evaluation methods. The main results of the graduate qualification work: an analysis of the company’s business processes, a methodology for the safety reserves calculation with consideration of storage space limitations and the products’ shelf life, a substantiation of the economic efficiency of the suggested methodology. The practical significance of the work is determined by the possibility of an application of the developed methodology in the supply chain of Baltika Breweries LLC.
